The story of Lark Distilling Co. is defined not only by its distillery, but by the vision of the man who helped shape modern Australian whisky making.

Bill Lark recognised that Tasmania possessed everything required to produce world class whisky, including fertile barley fields, exceptionally pure soft water, highland peat bogs and a climate ideally suited to bringing these elements together through a marriage of science, craft and passion. The idea of producing Tasmanian malt whisky was conceived during a trout fishing trip in Tasmania’s highlands. While enjoying a bottle of single malt with his father in law, Max, in the park at Bothwell, surrounded by Georgian architecture, barley fields and the gentle flow of the Clyde River, Bill remarked, “I wonder why no one is making malt whisky in Tasmania”.

The flagship expression of the distillery is the Lark Single Malt Whisky, bottled at 43% ABV. It is crafted using Tasmanian Franklin barley, malted at Cascade Brewery, and is lightly peated, with approximately 50% of the malted grain carrying peat influence. The resulting flavour profile is reminiscent of Scottish Speyside or Highland style whiskies.

The spirit is double distilled in locally made copper pot stills and matured in small 100 litre oak casks. The use of these compact barrels creates a larger surface area to volume ratio, accelerating interaction between spirit and wood and allowing maturation to develop over a shorter period, typically between five and eight years, compared with larger casks commonly used in Scotland.
