The idea of producing Tasmanian malt whisky was conceived during a trout fishing trip in Tasmania’s highlands. While enjoying a bottle of single malt with his father in law, Max, in the park at Bothwell, surrounded by Georgian architecture, barley fields and the gentle flow of the Clyde River, Bill remarked, “I wonder why no one is making malt whisky in Tasmania”.\u003c\/p\u003e\n\u003cp data-start=\"836\" data-end=\"1190\"\u003eThe flagship expression of the distillery is the Lark Single Malt Whisky, bottled at 43% ABV. It is crafted using Tasmanian Franklin barley, malted at Cascade Brewery, and is lightly peated, with approximately 50% of the malted grain carrying peat influence. The resulting flavour profile is reminiscent of Scottish Speyside or Highland style whiskies.\u003c\/p\u003e\n\u003cp data-start=\"1192\" data-end=\"1579\" data-is-last-node=\"\" data-is-only-node=\"\"\u003eThe spirit is double distilled in locally made copper pot stills and matured in small 100 litre oak casks.
