The third Rum Cask release marks the triumphant return of a classic finish from Lark Distilling Co., achieving a remarkable union between single malt whisky and their uniquely crafted Tasmanian rum.
The creation of their own Quiet Cannon Rum has provided a treasure trove of sweet, decadent rum casks, forming the perfect foundation for this single malt expression. Ten richly fortified first and second fill sherry casks from the Bothwell distillery were carefully selected and then finished in ex Quiet Cannon Rum casks. The result is a lifted, treacly single malt, offering notes of dark toffee, nutty oak and candied citrus, evoking romantic reflections of the Wild West.
Tasting Notes
Nose: Full and sweet, with golden syrup, stewed apple, cloves and almond nougat.
Palate: Delightfully lifted, warm and slightly resinous, with dark toffee, candied citrus and dry, nutty oak.
Finish: Notes of gunpowder, tobacco and treacle emerge, with the rum character becoming most prominent on the finish, inspiring romantic images of the Wild West.
Under the Liquor Licensing Act 1990 it is an offence: For liquor to be delivered to a person under the age of 18 years. Penalty: fine not exceeding 20 penalty units. For a person under the age of 18 years to purchase liquor. Penalty: fine not exceeding 10 penalty units
