After cooking for approximately five days, the agaves are crushed using a tahona stone before being transferred into 1,500 litre fermentation vats.\u003c\/p\u003e\n\u003cp data-start=\"718\" data-end=\"924\"\u003eNatural fermentation may last between seven and thirty days depending on the production season, rainfall levels and temperature variations.
